I wanted to make something that was easy and not heavy on the tummy. I had seen stuffed zucchini’s going around and thought that would be a great idea for Taquitos or enchiladas !

What you need

kosher salt

cup hot sauce

cup shredded cheddar
tsp dried oregano

tsp cayenne

tsp black peppercorn

tsp paprika

tsp onion powder

tsp garlic powder

tsp cumin powder

lb ground beef

zucchini
Instructions
🌮 cook the ground beef with all the seasoning and taco sauce. Add half of the shredded cheese mix well. 🌮 hollow out your zucchinis. It’s easier to cut them in half to hollow I didn’t do the bottoms ones they are hollow, add the taco meat. Add the sauce and cheese to the top. 🌮bake at 350° for 25 to 30 minutes until fork tenderView original recipe
