
STRAWBERRY SHORTCAKE CUPCAKES

Lately all my goodies have been bringing the Latina out in me with flavor profiles! This came out so good!! I also made these for my girl Bee! I remember when I first made her a cake it was strawberry but this one is the more modern version lol

What you need
egg
cup vegetable oil
malt drink mix

tbsp vanilla extract

cup nonfat greek yogurt

cup whipped cream

strawberry

tbsp natural sugar
lemon

cup powdered sugar
tbsp heavy cream
Instructions
π preheat the oven to 350Β° and prepare a cupcake pan with cupcake liners π in a bowl add in all the ingredients for the cake mix and mix well. Using a ice cream scoop, scoop out the batter into each cupcake liner. Bake in the oven for 16 to 18 minutes. π using a handheld mixer or stand mixer add in the whipping cream and mix, until it becomes a thick whipped cream. π add all ingredients to a small sauce pan for the strawberry preserve cook over medium low heat until it is thick and it starts to simmer. Remove from heat in allow to cool. π for the glaze, add all ingredients into a small bowl and mix well. If the glaze is too thin, add more powder sweetener if it is too thick, add more heavy cream. π once cupcakes have cool, top it with the whip cream at the strawberry, preserve, and drizzle some glaze and enjoy!View original recipe
