Whisk all dry. Add in large egg. Then start adding sparkling water until a thick pancake batter texture. Make sure shrimp and fish (cod) is pat dried. I did seasoned the fish and shrimp with salt, pepper, garlic powder, and paprika. I hated the oil dip, the shrimp and fish in the batter, and then Friday until both sides were golden brown.
I made the sauce the night before so all the flavors really marinate it. And just adjust to taste as I made it.
