1 yellow cake mix sugar-free @pillsburybaking 1 egg 1/2 cup butter, melted 1 teaspoon vanilla extract 1/4 cup brown sweetener🍪 mix cookie dough ingredients until dough forms, place in a plastic bag or wrap it in saran wrap and place in the fridge for an hour. Roll out cookies after an hour and cut into shape. Bake at 350° for 10 to 12 minutes. H “Marshmallow Fluff” 🌈 for each color you want requires the 1 teaspoon of gelatin and the tablespoon of water. 1 teaspoon clear gelatin @simplydelishnatural (use LIFTINGISCAKE) 1 tablespoon cold water 1 to 2 drops food color 4 egg whites 10 tablespoons sweetener 🥥 unsweetened, shredded coconut 🍓 strawberry jam @choczero (use code LIFTINGISCAKE) 🌈 in a small bowl for each color add in the gelatin, food coloring, and water, mix well set aside. 🥚 in a small pot add the egg whites and sweetener. Mix well. Over low heat, whisking continuously, whisk the eggs until they turn into a thick foam. You should be able to stick your fingers in and then the foam should be sticky. 🥚 remove from heat add to a new bowl and mix using a hand or stand mixer until it is a soft meringue. Separate the batter into equal parts of how many colors you have. Add the colored gelatin. If it’s too thick, the gelatin put in the microwave for 5 to 10 seconds. Mix with the meringue until it turns into a soft thick meringue. Pipe onto cooled cookies. Sprinkle the shredded, coconut and repeat for each color. Pipe strawberry jam in the center.
